We take great pride in the food we serve and use organic ingredients, sourced locally wherever possible.

Our Chef

Chef John Broening

Chef John Broening, our Enthusiast de Cuisine, grew up in France, the Soviet Union and Portugal where his father was a foreign correspondent for the Associated Press. He graduated from Haverford College with a degree in English Literature and attended Peter Kump’s New York Cooking School (now the Institute of Culinary Education). He has worked in several top restaurants in New York, San Francisco, Paris and Denver including China Grill and Metro with Patrick Clark, Guy Savoy’s Bistrot de l’Etoile Niel and Le Grenadin. He has been a featured guest chef at the James Beard House numerous times. His writing has appeared in the several publications including Gastronomica, Edible Front Range, The Denver Post, and Baltimore Sun. Chef John brings an incredible amount of expertise, creativity, and passion for clean and healthy eating to our kitchen.

We’re beginning construction on a new home for Zeal Boulder, an inviting space with ample patio space, nearby parking, and all of the Zeal decor our Boulder fans have come to know and love.

The Farm

Since 2016, Zeal has operated a small farm north of Boulder, CO where we employ organic farming practices to grow produce that graces the plates of our guests. From fresh salads to the herbs in our sauces, tasty ingredients from the Zeal Farmette make their way into dishes all throughout the growing and harvesting seasons. We love having this close connection to the land and are proud to practice what we preach by employing innovative methods of growing the tastiest fruits and veggies without the use of conventional pesticides or fertilizers.

The Zeal Farmette is carefully tended and managed by our beloved Farmer Sam and his team. During the summer months, you’ll often spy pictures of our farmers and the fruits of their labors in our social media posts.
